Tarta de Sidra (Otra receta)
1 Plancha de bizcocho genovés
2 Manzanas
125 ml. de leche
250 ml. de sidra
100 gr. de dulce de manzana
4 yemas de huevo
250 gr. de azúcar
4 hojas de gelatina (cola de pescado)
500 ml. de nata montada
Cocer las manzanas cortadas previamente en láminas, con agua y azúcar (4 cuch.), hasta que estén blandas. Reservar.
Hervir la leche, añadir la sidra, y cuando comience de nuevo a hervir, añadir el dulce de manzana, las yemas batidas con el azúcar (hasta que estén blanquecinas) y las hojas de gelatina.
Dejar enfriar y añadir la nata montada.
Colocar las láminas de manzana en el fondo del molde, de manera que coincidan una mitad de manzana en el fondo y la otra en el lateral del molde, como si fuera el corte de manzana transversal, pero se hace colocando primero las manzanas en el fondo y laterales y luego añadiendo la crema (con mucho cuidado para no descolocar las manzanas), cubrimos por último la crema con el bizcocho. Metemos en el congelador hasta que cuaje. Se puede decorar con dulce de manzana licuado.
Por cierto, EL MOLDE FORRADO CON PAPEL DE HORNO, cortamos un redondel del tamaño del fondo guiándonos con el propio fondo desmontable, y una tira para el lateral (medimos el contorno y añadimos un par de centímetros).
